Toptable Group is looking to seek an Executive Chef to lead the kitchen for the newest addition to our restaurant group. Designed by the internationally renowned and award-winning Rockwell Group in New York, this elegant and modern steakhouse breaks the old-school mold and highlights a vibrant see-and-be-seen destination restaurant. Anchored by an open show kitchen and a Grillworks Infierno as the centre piece, the menu features various cuts of beef, seafood, and produce — all locally sourced. The convivial atmosphere flows from the airy dining room sections to the bar and lounge and through the communal table and private dining space.

J0B SUMMARY:

The Executive Chef is directly responsible for creating and developing all food menus, and management of all aspects of food service and the kitchen. This hands-on leader in the kitchen has a sophisticated, trained palate and is in tune with current trends, in turn inspiring and driving the culinary team to create and deliver a great culinary experience for customers.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Creating innovative and inspirational menus that feature signature dishes
Accountable for recipe creation and costing, food ordering, food production, storage, and sanitation
Strives for creativity and quality in presentation
Maximizes the productivity of culinary staff, through effective supervision, leadership, management and coaching
Oversees the day to day control of labour and food cost
Develops rapport with customers; proactively identifies problem areas and formulates solutions
Develops strategies and action plans to achieve set goals and objectives
Proactively monitors performance of the restaurant against approved budget; makes appropriate recommendations as necessary
Facilitates exceptional customer service
Understands customers, builds organizational credibility and develops new revenue sources
Sets goals and standards while finding solutions that are beneficial to customers, while meeting deadlines that are decisive and achievement oriented


REQUIRED EXPERIENCE AND QUALIFICATIONS:

Minimum 5 years' experience at an Executive Chef level within a high-end steakhouse environment
Equivalent Red Seal certification, a degree in the Culinary Arts or an equivalent combination of education and experience
Seasonal menu development for a fine dining environment
Impeccable culinary skills
An inspiring leader who has proven skills rallying a team to achieve its highest potential, and then driving it to the next level
Extensive creative and innovative menu development and budget preparation experience
Highly committed to a premium level of quality
Skilled at developing and creating dining experiences that promote outstanding customer satisfaction and loyalty
Strong record of streamlining operations and improving service while preserving the highest levels of quality
Exceptional creative abilities
Strong verbal and written English communication skills, with the ability to read and interpret documents, write reports and to speak effectively to customers and employees
Comfortable with dealing with the media, public speaking, and demonstrating culinary techniques
Social media savvy
Responsive to approving negative guest commentary from third party review websites (TripAdvisor, Yelp, Google, etc.)
Engaged personality that excels in the limelight
A passion for collaborative chef engagements and guest chef appearances
Excellent professional presentation
Displays a positive attitude, maintains enthusiasm and celebrates success
Computer literate in systems related to the operation
Ability to meet the physical demands of the job (mobility, standing, walking, lifting for the majority of the day)
It is essential to have the flexibility to work evenings, weekends and holidays
